Strawberry Cheese Cake
1 graham cracker crumb shell
8-16 oz of softened cream cheese
confectioner sugar
ripe strawberries to cover the surface of the pie
Add enough sugar (1/2- 1 cup) to the creamed cheese to sweeten it to your taste. Spread this into the pie shell and chill. While it is chilling, make the jello mixture below so that it can cool. While it cools, you cut the tops off the strawberries removing the leaves and giving you a flat surface. When the jello mixture is cool enough to pour over strawberries, place the berries flat-cut side against the cheese mixture, and pour the jello mixture over the berries. Place in refrigerator chill the jello into thickening.
1 cup sugar
4 tbs cornstarch
1 small box of strawberry jello
1 cup hot water
Combine cornstarch and sugar, and jello in pan and stir to crush cornstarch lumps. Add water and boil 1 1/2 minutes then cool to room temperature. (Otherwise when you pour the jello sauce around the strawberries, you will cook the berries!)
